Is bacon really gut-friendly?

For this recipe, I used free-range bacon that was cured using celery powder instead of traditional sodium nitrates/nitrites. It won’t harm the gut if you have it in small doses but it’s best to take a dosage of vitamin C for antioxidants when consuming any bacon. Stick to the highest quality animal products or leave it out.

This soup will still be super delicious without the bacon. However, for best gut-healing benefits I would make sure to use beef bone broth as it contains all the wonderful collagen that keeps your gut lining strong. Highest quality organic, grass-fed bone broth is ideal. You could use chicken broth too if you prefer.

You can choose whether you want to enjoy it as a chunky broth soup or blend it to make a delicious smooth and creamy bowl of goodness.

Instructions
  1. Heat avocado oil in a pan. Dice bacon and add it to the pan. Fry until the fat is crispy.
  2. Remove bacon from the pan, leaving all excess oil in the pan. Set cooked bacon aside to cool.
  3. Slice leeks in thin slices, from the white ends, stopping before the rough green leaves. Add to the pan of bacon oil and fry until golden.
  4. Add beef bone broth and water to a large pot. Slice carrots and mushrooms and add them to the broth along with the leeks. Season with salt and pepper.
  5. Simmer on low heat for 30 minutes, add coconut cream and simmer for further 15 minutes.
  6. Optional: If you prefer a smooth soup, take it off the stove and blend with an emersion blender to your desired consistancy.
  7. Garnish with bacon bits and enjoy!
